COFFEE QUALITY FORMATION: TEN DAYS EXPLORING COLOMBIAN COFFEE PLANTATIONS

Umami Coffe Camp Colombia Special Edition came to an end. The future sets aside new interesting projects in partnership with Café Quindio.


The special edition of umami Coffee Camp in Colombia came to an end last April 26. Once again, the "Umami format" gave the opportunity to a group of twenty-five participants to visit and work in the plantations of the coffee production country, combining field experience and SCAE (Speciality Coffee Association of Europe) Coffee Diploma System trainings. In this last trip bartenders, roasters and coffee lovers, from Italy, Honduras, Australia and Germany, explored far and wide the Quindio region.
Of crucial importance has been the partnership between Umami Area, based in Florence and engaged in the field of coffee trainings, and Café Quindio. This latter is a coffee production company, owned by the Moreno family and established in Armenia, capital city of the region. The company owns three plantations and over thirty cafeterias spread throughout the country, whose concept expresses the philosophy of quality and strong identity of the Colombian tradition. The newly formed partnership between Umami Area and Café Quindío - as announced during the on-site press conference - has led to the design of a plan of education on quality coffee in Colombia that will develop in four annual camps. Thus, in the coming future, those willing to gain fieldwork experience will have several opportunities to see with their own eyes the origin of coffee.

Fieldwork experience among the coffee plants
The recent edition of umami Coffee Camp witnessed the participants actively participating in the collection of ripe coffee cherries in the plantation Saint Lucia. From the selection of the best fruits, they had the chance to follow the whole processing of the beans. The experience ended with “cupping sessions” during which participants tasted a rich selection of different varieties of coffee, in order to grasp the different organoleptic flavours. At Finca El Lagrado plantation, the participants visited the coffee nursery, witnessing the growth process of the coffee trees from sowing to the first 18 months of life. Here, each participant planted and gave a personal name to his/her plant. Afterwards, the journey, led Umami team at Finca La Mina, whose land has an altitude of 1400 to 1900 meters above sea level and a density of coffee plants ranging from 4000 to 6000 per hectare. The varieties that have been planted here are Castillo, Colombia, Yellow Bourbon, Caturra and Geisha. In this "Beneficio" (processing plant) Colombians pickers can earn bonuses in monetary terms and not, only based on the quality of their crop, which is around 110-120 pounds daily. Along with the everyday fieldwork experience, participants attended the Coffee Diploma System classes, led by a team of SCAE authorized trainers, in order to obtain the certifications of the Coffee Diploma System modules: green coffee, roasting, sensory and barista in basic, intermediate and advanced levels.
The journey foresaw many different activities. One of these was the visit to the production plant Caravela Coffee, where participants witnessed the coffee selection done through densimeter and optical machines and the visit to the Parque Del Café, a theme park, among nature and fun, where there is the coffee botanical specie of Liberica, very rare, long-lived, robust and lush that can reach 18 meters in height, with fruits and seeds twice big those of Arabica, and also more resistant to parasites attacks.










Andrej Godina, president of Umami Area since June 2015, comments on the path that Umami Area is going through: "[…] the association Umami Area in such a short time has helped and boosted the spread of the culture of quality coffee in Italy, with significant and concrete changes. It has offered trainings to over two hundred professionals, with three international travels to the coffee plantations, four international collaboration agreements and two projects funded by the European Union." A path, developed to spread the culture of quality coffee in Italy and in Europe, which is opening up to new projects with particular focus on social responsibility and environmental sustainability.”
Brazil is going to witness one of the next activities. In fact, Umami Area signed an agreement with Fazenda de Esperanza, a social project with over seventy farms devoted to the rehabilitation of drug addicts. On December, there is going to be the new Umami Coffee Camp Honduras Special Edition, along with the purchase of a specialty coffee plantation, within the Celaque National Park, UNESCO world heritage.

C.O.F.F.E.E., Cooperation for fostering Education and Employability.

An international experience to exchange the love of making Coffee

A partnership made of 8 organizations from 7 different counties (Germany, Belgium, Spain, Italy, Colombia, Brazil, Indonesia), provides the younger generations with competitiveness, know how and professionalization in a field where they can offer their expertise: coffee. The group is made of NGO´s active in the youth field, business realities and a school institute. 

Aim of this project, that started in January 2016 and will go on until June 2017, is to offer the participants a newly developed education concept about the whole coffee chain. Key element is the international experience and exchange for and between the participants. Thanks to the European support we will be able to offer a high professional coffee education, and the experience of an international exchange, with prices that will make it accessible to people that maybe otherwise wouldn’t have that possibility.

Youth unemployment has become a major issue for many organizations in European and non-European countries. We believe that well-performing education and training systems, with better synergies with the labour market, can help to tackle these challenge.

Activities Planned:

Int´l Trainings in Florence: two weeks dedicated to coffee education, following the steps of the Coffee Diploma System of the SCAE, Speciality Coffee Association of Europe.
-       Implementation of an online resource with E-courses and the possibility of online trainings.
-       Learning exchange Mobility to Brazil and Sumatra. In order to consolidate cross-border collaboration and transfer of know-how, the European participants will discover the real life of the farmers in the plantation. Peer learning activities and non-formal learning will be the method used to further the group knowledge and professionalization in the coffee work.

THE MAIN EVENTS
TRAININGS IN ITALY (4-10 April 2016 / March 2017)

The COFFEE camp is an international one-week course dedicated to coffee education, following the steps of the Coffee Diploma System of the SCAE, Speciality Coffee Association of Europe. The Coffee Diploma System (CDS) is a comprehensive education programme which covers the coffee journey from bean to cup. It is made up six modules and it is suitable to anyone from the complete beginner to the experienced coffee professional.

TRAININGS IN BRASIL (September/October 2016) AND INDONESIA (January 2017)

In order to consolidate cross-border collaboration and transfer of know-how, the European participants will discover the real life of the farmers in the plantation of the partners.
The two missions will last 10 days and comprises theoretic and practical workshops. Peer learning activities and non-formal learning will be the method used to further the group knowledge and professionalization in the coffee work.

PARTICIPANTS

The education in the world of coffee is sometimes difficult to reach for those that mostly need it, due to high costs. Through this project we want to provide vocational training, and experience of an international exchange to people who are very motivated to learn and undertake various activities in the field of coffee. The selection of participants will be handled individually by each partner, considering the motivation, general expectations and dreams connected to the participation in the project. This will help to keep the quality of the training and the results high (and to have participants that are motivated and serious).

In der Rösterschule: Kaffee zwischen Kunst und Chemie


Das Umami Roasting Camp ist vom 25. bis 27. Mai 2016 zu Gast bei Petroncini in Italien. Drei Tage Intensiv-Schulung im Bereich Kaffeeröstung mit den Dozenten der “Umami Area” und in den Trainings-Einheiten des Coffee Diploma Systems der SCAE.

Die “Umami Area” aus Florenz organisiert Events und Bildungsveranstaltungen für Aktive und Interessierte aus der Kaffee-Welt. Ab sofort ist das Bewerbungsverfahren für das nächste Umami Roasting Camp eröffnet. In einer dreitägigen Schulung vom 25. bis 27. Mai geht es in erster Linie um das Kaffeerösten.
Eingeladen sind Kaffeeröster aus ganz Europa. Die Schulung findet statt in Sant'Agostino in der Provinz Ferrara im Werkstattlabor für Forschung und Entwicklung der Petroncini Impianti. Hier werden seit fast hundert Jahren Kaffeeröster und komplette Anlagen zur Kaffeeverarbeitung hergestellt. Die Firma Petroncini stellt die Werkzeuge und Instrumente für die Produktanalysen sowie auch die Kaffeeröster für die praktische Schulung zur Verfügung.
Die didaktischen Elemente der Umami Area basieren auf den internationalen Schulungs-modulen der SCAE (Speciality Coffee Association of Europe) – hier im Besonderen auf der Roasting-Einheit des Coffee Diploma Systems für die Levels 'intermediate' und 'professional'. Es geht darum, die Kenntnisse in der Auswahl und im Rösten des Rohkaffees auszubauen, das Wissen um die chemische Beschaffenheit des Kaffees zu vertiefen, die fachgerechte Handhabung der nötigen Instrumente zu lernen, um so zu einem immer besseren Endergebnis in der Kaffeetasse zu kommen – auf dieses Ziel konzentriert sich der ganze Ehrgeiz der “Röstmeister”.

In Italien gehen die Kunst und die Fähigkeiten der Kaffeeröster auf eine alte und ehrwürdige Tradition zurück. Gleichzeitig ist sich eine immer größere Anzahl von Fachleuten der Tatsache bewusst,  dass eine ständige Schulung und fachliche Qualifizierung nötig sind, um mit den neuen Marktanforderungen Schritt zu halten und die breite Vielfalt der neues-ten technischen Entwicklungen voll auzuschöpfen.

Kursleiter ist Andrej Godina, Präsident der “Umami Area”. Er hat in Wissenschaft, Technologie und Wirtschaft der Kaffeeindustrie promoviert. Der zweite Dozent ist Röstexperte Marco Cremonese, auch er autorisierter SCAE-Trainer. Die zwei Kurse 'intermediate' und 'professional' beschäftigen sich mit der Analyse und Auswahl der Rohbohnen, vertiefen die physio-chemischen Veränderungsprozesse, die der Röstvorgang mit sich bringt und begleiten und kontrollieren den Prozess und seine Parameter. Die Schulungseinheiten sind auch in englischer und deutscher Sprache verfügbar und werden durch die praktischen Übungen an der Röstanlage ergänzt. Den Abschluss bildet dann eine Prüfung und das nötige Anerkennungsverfahren, die für das vollständige Coffee Diplom der SCAE nötig sind.
Jeder Schulungskurs erwirbt Kenntnisse und Erfahrungen mit unterschiedlicher Technologie, die von den Petroncini Impianti zur Verfügung gestellt wird. Der Intermediate-Kurs hat einen elektrischen Röster zur Verfügung, bestens geeignet für das Rösten von kleinen Kaffeemengen. Der Professional-Kurs führt seine zahlreichen Tests und Proben an einem Röster der neuesten Generation durch: Diese Anlage bietet genaue Kontrollfunktionen und kann manuell in unterschiedlichen Parametern eingestellt werden: die Intensität der Flamme, die Wärmezufuhr, die Drehgeschwindigkeit der Trommel und die Intensität der Luftaspiration (Airflow-Kontrolle).
Am Ende haben die Teilnehmer dann die Gelegenheit, die aromatischen Eigenschaften des Kaffees je nach Verarbeitungsart unterscheiden zu lernen. So wird nachvollziehbar, welche Faktoren im Röstprozess das Endprodukt in der Tasse beeinflussen.
Helle, mittlere und dunkle Röstungen werden miteinander verglichen, um so die unterschiedlichen Auswirkungen auf das Endprodukt zuordnen zu können. Aus diesem Grund enthält das Schulungsprogramm auch ein sogenanntes “cupping”: Eine Kaffeeverkostung im Werkstattlabor, bei dem der geröstete Kaffee gefiltert oder “à la brasiliana” probiert wird.

Das Umami Roasting Camp ist ein technischer Schulungskurs für Fachleute aus kleinen und großen Röstereien auch jenseits der italienischen Landesgrenzen. Die Florenzer Bildungsinitiative organisiert dafür auch Events und Schulungskurse für Teilnehmer deut-scher und englischer Sprache und will so zu einem Austausch von Kultur und fachlichen Kompetenzen beitragen zwischen Italien und allen anderen Regionen, die sich der hohen Qualität und der Weiterentwicklung der verschiedenen Etappen der Produktionskette des Kaffees verschrieben haben.

Was ist das Umami Kaffee Camp?
Im November 2014 fand in Poggio Arioso in Scandicci (Florenz) die erste Schulungswoche als “Umami Barista Camp” statt. Umami – so heißt die fünfte Qualität des Geschmackssinns, und beschreibt in der japanischen Tradition einen vollmundigen Geschmack.
Der Name ist damit durchaus als kleine Provokation zu verstehen in einer Zeit, in der der italienische Kaffee eine neue Blütezeit erfährt. So entwickelt sich unter der Leitung von Andrej Godina und Francesco Sanapo und auf Nachfrage einer wachsenden und fachlich hoch qualifizierten Comunity ein neues Format der Wissensvermittlung.

Seit 2015 werden die Veranstaltungen in den Hügeln der Toskana organisiert von der Vereinigung “Umami Area” und beinhalten die Studien-Module der SCAE, für die sich die Teilnehmer auf Wunsch qualifizieren können: barista skills, brewing, green, roasting und sensory.
Die Camps sind unterschiedlich lang – von drei bis sechs Tagen, können aber an die Bedürfnisse der Teilnehmer angepasst werden. Der aktuelle Sitz der Schulungen der Umami Area ist ausgestattet mit der notwendigen Ausrüstung für die praktischen Übungseinheiten und hält mit den laufenden Entwicklungen auf dem Sektor ständig Schritt.

Die Teilnahme von bis zu fünf autorisierten SCAE-Trainern und der maximalen Anzahl von sechs Teilnehmern pro Schulungsgruppe ermöglicht ein sehr individuelles Lernklima und eine hohe Professionalität und Wissenstiefe.
